Coconut Burfi

Ingredients

a.. We require ---Grated fresh coconut - 2 cups (heaped)
b.. Sugar - 1 1/2 cup
c.. Ghee - 3 tbsp

Method:

  1. First grate the fresh broken coconut finely and without any dark coloured portion.
  2. Take 1/2 cup grated coconut separately and grind it with little water.
  3. Strain through a sieve to get coconut extract. (do not throw the squeezed pulp.
  4. Mix with rest of the coconut) coconut milk.
  5. Mix this coconut milk with sugar and heat it in a heavy kadai.
  6. When soft ball consistency is reached add grated coconut and stir constantly.
  7. When it becomes white, frothy and leaves the sides of the vessel add ghee and cook for a while till ghee is absorbed.
  8. Remove from fire and pour over a greased tray.
  9. Cut into pieces after two minutes when it is still warm.
  10. To obtain smooth and even textured burfi, grind the coconut in a mixie without adding water, and then use it as mentioned in the recipe.
  11. To obtain 2 layers : Divide the mixture equally into two portions, after removing from fire.
  12. To one portion add 1 tbsp of cocoa and stir well. Pour as two layer cake one on top of the other immediately, on a greased tray.
